For turkey, you need quite a rich and perhaps oaked white wine, or try a fun blend such as from the Rhone. Otherwise try a young, medium bodied red with lots of juicy red fruits – New World Pinot Noirs are great or for a more traditional choice, try Barbera or Primitivo from Italy.

For goose, you need a high acidity white wine, to stand up to the fat! Otherwise try a high acidity, high tannin and fairly robust red wine like a traditional Barolo or you could go completely off-piste and get something from Madiran, Cahors in the South of France.

For beef, you need a white wine with good minerality and acidity to cut through the fat which coats your mouth, try a Sauvignon Blanc from Friuli in Italy or even a dry rosé. Of course, so many red wines will match perfectly with beef from Malbec, Burgundy, to Shiraz, Rioja and Cabernet blends from Australia or South Africa. An added bonus – so many of these great reds have high fruit content and warm spicy notes, brilliantly matched with mince pies too – that’s wine savvy!
